Ingredients
  

  • Dough:
  • 3/4 cup pumpkin puree
  • 1/2 cup whole milk , warmed
  • 1/3 cup unsalted butter , melted
  • 1/3 cup granulated sugar
  • 1 large egg
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Filling:
  • 1/2 cup unsalted butter , softened
  • 3/4 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Frosting:
  • 4 ounces cream cheese , softened
  • 3 tablespoons unsalted butter , softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 –2 tablespoons milk

Equipment

  • Stand mixer with dough hook (or large mixing bowl)
  • 9x13-inch baking dish
  • Rolling Pin
  • Sharp knife or unflavored dental floss
  • Mixing bowls

Method
 

  1. Combine warm milk and yeast; let sit until foamy, about 5–10 minutes.
  2. Whisk pumpkin puree, melted butter, sugar, and egg until smooth.
  3. Stir in yeast mixture.
  4. Add flour, cinnamon, and salt; mix into a shaggy dough.
  5. Knead 6–8 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled.
  7. Roll dough into a 16x12-inch rectangle.
  8. Spread softened butter over dough, leaving a border on one edge.
  9. Mix brown sugar and spices; sprinkle evenly over butter.
  10. Roll dough tightly into a log from the long edge; pinch seam to seal.
  11. Slice into 12 rolls.
  12. Arrange rolls in a greased 9x13-inch dish; cover and let rise 30–45 minutes.
  13. Preheat oven to 350°F.
  14. Bake 22–25 minutes until golden and cooked through.
  15. Cool 10 minutes in the pan.
  16. Beat cream cheese and butter until smooth; add powdered sugar and vanilla, then milk to reach spreadable consistency.
  17. Spread frosting over warm rolls before serving.
