Ingredients
  

  • 6 slices halal beef bacon, chopped
  • 4 tablespoons unsalted butter
  • 1 small yellow onion , diced
  • 3 cloves garlic , minced
  • 1/3 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 2 pounds russet potatoes , peeled and diced
  • 1 cup whole milk
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese ,plus more for topping
  • 1/2 teaspoon salt ,plus more to taste
  • 1/4 teaspoon black pepper
  • 3 green onions ,sliced

Method
 

  1. Cook the chopped halal beef bacon in a large pot over medium heat until crisp. Remove and set aside.
  2. Add butter and onion to the pot; cook until softened. Stir in garlic and cook 30 seconds.
  3. Sprinkle in flour and stir constantly for 1-2 minutes to form a roux.
  4. Whisk in chicken broth gradually, then add potatoes, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer uncovered for 18-20 minutes until potatoes are fork-tender.
  6. Mash about a third of the potatoes in the pot for a thicker texture.
  7. Lower the heat and stir in milk, sour cream, and cheddar cheese until melted and smooth.
  8. Serve topped with reserved beef bacon, extra cheddar, and green onions.
