Honey Walnut Shrimp

Ingredients
  

  • 1 cup walnut halves
  • 1/3 cup granulated sugar
  • 3 tablespoons water
  • 1 pound large shrimp , peeled and deveined
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup cold water
  • 1 large egg
  • Vegetable oil , for frying
  • 1/3 cup halal-certified mayonnaise
  • 2 tablespoons sweetened condensed milk
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice

Equipment

Method
 

  1. Cook sugar and water in a saucepan until dissolved, add walnuts, and cook 3–4 minutes until coated. Cool on parchment paper.
  2. Whisk cornstarch, flour, and baking powder; add cold water and egg to form a smooth batter.
  3. Pat shrimp dry and coat in batter.
  4. Fry shrimp in 350°F oil for 2–3 minutes per side until golden and crisp. Drain on a wire rack.
  5. Whisk mayonnaise, condensed milk, honey, and lemon juice for the sauce.
  6. Toss warm shrimp in sauce, top with candied walnuts, and serve immediately.
