Easy Spanish Rice Recipe

Fluffy, tomato-based Spanish rice made with long grain rice, garlic, and warm spices. A quick one-pan side dish ready in about 35 minutes.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 cup long grain white rice
  • 1/2 cup diced white onion
  • 2 cloves garlic , minced
  • 1 cup tomato sauce
  • 2 cups chicken broth , halal-certified
  • 1 teaspoon ground cumin
  • 1 teaspoon chicken bouillon powder , halal-certified
  • 1/2 teaspoon salt , or to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas and carrots , optional
  • 2 tablespoons chopped fresh cilantro , for garnish

Equipment

  • Large skillet or saucepan with lid
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Fork (for fluffing)

Method
 

  1. Heat oil in a large skillet over medium heat. Add rice and toast, stirring frequently, for 4–5 minutes until light golden.
  2. Add onion and cook 2 minutes until softened. Stir in garlic and cook 30 seconds.
  3. Add tomato sauce, chicken broth, cumin, bouillon powder, salt, and pepper. Stir to combine.
  4. Bring to a boil, reduce heat to low, cover, and simmer 18–20 minutes without lifting the lid.
  5. Stir in peas and carrots during the last 5 minutes, if using.
  6. Remove from heat and let rest, covered, for 5 minutes.
  7. Fluff with a fork and garnish with cilantro before serving.
