Whisk flour, sugar, baking powder, and salt together until evenly combined.
For pancakes, measure 2 cups of the dry mix into a large bowl.
Whisk milk, eggs, and melted butter together in a separate bowl.
Add the wet ingredients to the dry mix and gently whisk until just combined. A few small lumps are fine.
Heat a nonstick skillet or griddle over medium heat and lightly grease it.
Pour about 1/4 cup batter onto the skillet for each pancake.
Cook for 2 to 3 minutes, until bubbles appear and the edges look set.
Flip and cook for another 1 to 2 minutes, until golden and cooked through.
Repeat with remaining batter and serve warm with butter and maple syrup.
