Ingredients
  

  • 3 cups cooked chicken , shredded or diced
  • 1/2 cup mayonnaise
  • 2 stalks celery , finely diced
  • 1/4 cup red onion , finely diced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 tablespoon fresh parsley , chopped (optional)

Method
 

  1. Shred or dice the cooked chicken and place it in a large mixing bowl.
  2. Finely dice the celery and red onion; add to the bowl with the chicken.
  3. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  4. Pour the dressing over the chicken mixture and stir until evenly coated. Fold in parsley if using.
  5. Taste and adjust seasoning as needed.
  6. Cover and refrigerate for at least 30 minutes before serving.
