Ingredients
  

  • 3 cups cooked chicken breast, shredded or diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 celery stalks, finely diced
  • 1/4 cup red onion, finely diced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill or parsley, chopped (optional)
  • 8 slices of bread
  • Lettuce leaves
  • Sliced tomato, optional

Equipment

  • Large mixing bowl
  • Whisk
  • Cutting board and knife

Method
 

  1. If cooking chicken fresh, poach in salted water for about 12 minutes until internal temperature reaches 165°F, then shred or dice. If using rotisserie chicken, remove skin and shred.
  2. Whisk mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a large bowl until smooth.
  3. Add chicken, celery, onion, and dill to the dressing. Stir gently to combine.
  4. Cover and refrigerate at least 30 minutes.
  5. Assemble sandwiches with lettuce, tomato, and chicken salad between bread slices. Slice and serve.
